Lemon Meringue Cupcakes

Can you believe it’s already November? I have heard Christmas music playing in two stores now. That isn’t so bad right? I did hear a rumor that there is an LA radio station already playing Christmas music but I haven’t been able to find it. I think I will wait until after Thanksgiving to start listening to Christmas music. I have many many Christmas CDs, at least 30 I think plus new ones I’ve downloaded on to my iPod over the years. Needless to say, I am excited for Christmas to be coming… and this year to be over.

Pretty much the best thing that has happened this year is that Barack Obama was elected president. I try and remember that when I think about all the crap that has happened thus far –

– husband loses job
– husband breaks right ankle (can’t drive)
– i worked for 3 different companies this year
– sued our tenant who in turned sued us back
– my little dog officially diagnosed with seizures
– friend is diagnosed with cancer

Let’s hope we can make it through the next 2 months unscathed!

On a good note, my husband was contacted again by the FBI. They called him on Friday saying they are reinstating his application and moving him into Phase 2 which means he has a serious interview early December. I hope this works out this time. He has the perfect demeanor to be an FBI agent. But not like those FBI agents in FEDS. Remember that movie??

That pic above is the most recent cupcake I made – Lemon Meringue Pie cupcake. Super delicious! Lemon cupcake filled with lemon curd and topped with a real honest to goodness meringue toasted in the oven. I am making another batch of these tonight along with some Pumpkin chocolate chip cupcakes for my friend Missy’s school sale on Wednesday. I’ll be donating 15% of the sale of these cupcakes to the school so they can buy school supplies and other fun stuff.

I took a break from baking because I’ve been battling a cold for the last 6 days. Although I did make a Pumpkin Cheesecake with Gingersnap Crust as a trial run for Thanksgiving on Saturday night. It would have turned out great if my husband hadn’t turned down the oven temp by 50 degrees when I was baking the crust AND if our roommate hadn’t turned off my timer without looking at the leftover minutes. So I think I ended up taking the cheesecake out of the oven too soon. Oh well. It tasted really good. I got the recipe from here: Baking and Books.
