I’ve pinned this Pumpkin Peekaboo cake from She Knows back in November and intended on making it for Thanksgiving and then for Christmas and yea, it never happened. I was trying to think of a neat treat for St. Patrick’s Day and the peekaboo cake sprang to mind. So here is my version of the cake all greened up for St. Pat’s Day.
You’ll need:
- 1 9×5 loaf pan
- Your favorite vanilla pound cake recipe x 2
- Green food coloring
- Shamrock cookie cutter
Start out making one batch of your favorite vanilla pound cake. Or you can use a box mix. After your done mixing it, add green food color. I added about 1 tsp of green food color paste to my batter because I wanted it to be a nice dark and bright green.
Bake the pound cake as directed but cut off the baking time by about 10 mins.
When it’s done, let it cool in the pan for 15 mins then remove and let the loaf completely cool to room temperature.
Once it’s completely cool, cut it into slices the width of your cookie cutter.
Check out that green!
Take your shamrock cookie cutter and press it into a slice of cake.
I bought this cookie cutter at Michaels.
Do this to each slice. Then eat the leftover pieces.
Ok you don’t HAVE to eat the leftover pieces. Save them to later to use for cake balls.
Put the shamrock pieces in the freezer for about 10 mins. While they are in the freezer, make up another batch of vanilla pound cake and clean your loaf pan.
Once you’ve prepped your loaf pan, pour a little bit of vanilla cake batter into the pan. About 1/2″. Then place each shamrock into the cake pan like so:
In hindsight, I can say that my shamrocks were spaced too far apart. I should have put them closer together. Learn from my mistakes.
Then gently spoon in the remaining vanilla pound cake batter. You will have extra because the shamrocks are taking up space. So you can save it for later or make yourself a pound cake cupcake.
Bake according to your recipes directions. Take it out of the oven and let it cool in the pan for 15 mins. Then remove and let cool completely before cutting.
And VIOLA!
Them there’s a shamrock in that cake!
What a great treat to add to your kids school lunch! Or as an afternoon snack? Or for the adults, how about making a drizzly chocolate sauce kicked up with some whiskey. Or topping with a Bailey’s whipped cream and chocolate sprinkles?
