Peaches and Cream cupcake

Oh wait, that’s Peaches and Herb! This is Peaches and Cream. Peaches and Cream cupcake actually. Did some recipe testing last night and came up with this delicious and fresh cupcake.

I used 1 cup of fresh peaches macerated in 1 teaspoon of sugar, added that to the batter and it resulted in a very fluffy but moist and dense cupcake. I topped it off with a light swiss meringue buttercream and got to use a new ingredient I picked up at Sur La Table – Vanilla Bean Paste. It smells HEAVENLY.

Overall, it’s pretty good. I think that I will use more peaches next time although my key recipe taster (aka the Husband) thinks it’s fine the way it is. I also like that it isn’t too muffiny which I was concerned about it being.

So I think I am going to add this to my menu, as a seasonal option.
