So things slowed down a bit in April, which was fine. I honestly needed a little break. But they are picking up again and with great speed. So I am trying to prepare myself. May, June and July are going to be busy months!
The client requested cupcakes with the baby’s name on them. I did impressions with stamps that have a typewriter font on them.
My dear friend Elizabeth is readying herself to have baby #2 so we celebrated with a small shower with a garden theme. I made Pink Lemonade cupcakes.
I had a last minute request for Mii and Wii cupcakes for a boy’s birthday. The parent’s emailed me the Mii’s they had made on their Wii and I printed them on edible paper.
That order also included Root Beer Float cupcakes.
And I’ve been doing some experimenting with offering Cup Pies. Still working out the kinks but so far they have turned out really well and been greeted with much joy.
I’ve been thinking about opening up a shop on Etsy to sell cup pies, cupcake trifles, and to thin out my growing collection of cupcake liners, sprinkles, and etc that I’ve picked up over the years and haven’t yet used. What do you think? Any experience with selling food on Etsy?

I am going to apologize now for the next few posts that you’ll see about things I did MONTHS ago. They have been sitting in my blogger draft waiting for me to give the finishing touches which means they are now covered in dust and need a good cleaning.
Lots going on, sad to say not really related to cupcakes but that is still going well and strong. April was a slow month but it’s picking back up again with wedding season around the corner, graduations coming up, fathers day, world cup, summer parties, etc. So I am going to be a busy bee the next few months.

Not THAT J.C! Johnny Cupcakes!
I had SUCH A FABULOUS TIME meeting and greeting with Johnny and his crew. And it goes without saying that I really had fun hanging with my cupcake family, the Haskells of Retro Bakery. I don’t know how Kari and Brian do it but they have managed to run a successful business while also raising two of the best kids around. They are mature, fun, silly, and totally down to earth kids. Lucy had me in laughing fits the entire time and Abbi was so fun to talk to and gossip with. She has such confidence for a kid her age.
Since we were VIPS (ehem) we got to sit inside Retro and wait for Johnny’s arrival. THANK GOD because that line was crazy!! Like 200 people in line. And one kid got there at 6am, BEFORE Retro even opened! Everyone in line was such a good sport too. It was harmonious. You can read all about it from Kari’s experience here.
Johnny and his crew, Danny, Paul & Stebs, were all so nice and professional. They hung around for a bit after everyone left and played around, graciously let us take pics of the gang, ate cupcakes and talked about the tour, life, etc. It was sad to see them all go. But they had more cities to visit, tshirts to sell, people to meet, memories to make.

I don’t know how Stebs does it! His videos are GREAT!! He does all that work while on the road between shows. I don’t think he sleeps. Seriously.
Anyway, if you haven’t read Johnny’s story – head over here. He is truly the man, doing his thing, getting family and friends involved, doing what he loves. He is the one us small biz folks look up to. He gives me hope that I too one day can do what I love full-time, involve my family and be able to share that with everyone.

I’m sorry about the lack of posts. I’ll just say that I’ve been busy with my job, my fun job, life, etc. whew. i had a post about the Cupcake Challenge but I’m over it. I didn’t win. I am glad I did it but I won’t be doing it again. It was fun and I’ll post some pics later. Thanks to everyone who gave me their support -my husband, my sister, her boyfriend and especially Shari. I seriously can’t thank Shari enough. She was my biggest cheerleader and she totally came through. And you HAVE to click on over to her blog and read about her experience at the event. Let me just say – I’m so jealous!! Now every time I see HIM I just remember how she got to be INCHES away from HIM! AH!
Been working on so many projects and orders lately. It’s amazing to think that a year ago I was just thinking about moving my hobby into a business and here I am now, busy EVERY weekend with orders. It’s still fun! I don’t regret moving forward. Things are starting to get to a sticky point though where big decisions are going to need to be made. I’ll leave it at that.
So what HAVE I been doing instead of blogging??
50th Birthday Surprise Party tower. Don’t you LOVE that glittery 50? I had to hand cut those numbers because I didn’t have cookie cutters big enough.
Giraffe cake for a 10 yr olds birthday slumber party. She loves giraffes. Too cute to eat right?
This was really fun! A pink and orange cupcake tower for a Bat Mitzvah. Loved these colors! I think my favorites were the ones dipped in half bright pink and half bright orange sparkling sugar.
Baby shower tower. The mama to be found a tower she liked and asked for the same thing. I did make a couple modifications to the top tier cake. Loved this too. I love doing baby shower towers.
So those are some of my favs from the past couple weeks. I also did a dessert buffet for a website launch but I’ll show that off in another post.

So yea I’m excited! It’s going to be a lot of work. And the fact that I’m working all week isn’t going to help. I did take Friday off so I can start preparations. And so did my husband to help as well. We’ll get through it. It’s only 50 (2 doz) pans of mini cupcakes. When I say it like that, it doesn’t seem like so much as saying 1200 mini cupcakes. I keep telling myself…

Tomorrow is Mardi Gras so I thought I would share with you this cupcake recipe for Mardi Gras cupcakes.
Pull out your favorite yellow cake recipe and add 1 tsp of cinnamon to the dry mixture. Make sure it’s incorporated well by whisking it into the flour mix. Or if you have any cinnamon chips handy, throw those in there instead. Make the recipe as directed and scoop into cupcake pans lined with liners.
Grab another bowl and make a crumb topping –
1 cup all-purpose flour
3 tablespoons light brown sugar
2 tablespoons granulated sugar
1 teaspoon baking powder
1/2 teaspoon of cinnamon
Pinch of salt
6 tablespoons unsalted butter, melted
In a medium bowl, combine the flour with the brown sugar, granulated sugar, baking powder, cinnamon and salt. Stir in the melted butter, then pinch the mixture until it forms pea-size clumps.
Sprinkle the crumb topping on top of each cup. Add as little or as much as you’d like. I usually add a lot. 😀 Bake your cupcakes as directed but add another 5 mins to make sure the crumb topping gets all baked up.
Pull out of the oven and let cool.
I added a cinnamon cream cheese frosting on the cupcake you see up there.
Cream Cheese frosting
2 (8 ounce) packages cream cheese, softened
1/2 cup butter, softened
1 teaspoon vanilla extract
2 cups sifted confectioners’ sugar
1 teaspoon of cinnamon
In a medium bowl, cream together the cream cheese and butter until creamy and fluffy, about 3 mins. Beat in the vanilla, then gradually beat in the confectioners’ sugar. Add the cinnamon. Beat again on medium-high for another minute. Store in the refrigerator after use.
I used a 1M tip to pipe a zig zag on top of the cooled cupcakes but you can also just spread some on with a regular ol butter knife. Then sprinkle on some colored sprinkles in the Mardi Gras colors of green, purple and gold (yellow).
If you don’t have a lot of time, you can always use a boxed yellow cake mix (I recommend Duncan Hines All Butter Yellow Cake) or I’ve seen some Crumb muffin mixes in the store. Just bake those on up and make your buttercream from scratch.

Been getting a few orders for corporate logo cupcakes lately. These are really fun to make and I like working with the edible paper. I think that these would be a great gesture from a company looking to woo or say thank you to a client or to serve at their company picnic this spring and summer. Or imagine them all dolled up for holiday parties as favors for the guests to take home?

So this is what keeps running through my head when I think about this order I did for a little girls 1st birthday party:

Anyway, here are some shots of the finished project. It was 84 cupcakes total so I had to make 84 little lady bugs. My finger tips were red for days!
And a giant cupcake to match, for the little one to smash…
